A Las Vegas food truck built around one thing — the puffy taco — and a commitment to fresh flavor and welcoming service.
How it started
Shawn’s Puffy Tacos was built around a simple idea: bring freshly prepared puffy tacos and welcoming service to the Las Vegas community. Our signature flash fried flour tortillas create a light, crisp shell for flavorful fillings and fresh toppings.
Each taco combines flame grilled steak or chicken with house made guacamole, pico de gallo, crema and cotija cheese. We focus on thoughtful preparation and consistent quality, from the first order to the last.
Today, our food truck brings that same care to weddings, corporate gatherings, private celebrations, school events and festivals throughout the Las Vegas Valley. We work with each host to create a menu and service experience suited to their occasion.
How we do it
Fried to order
Our flash fried flour tortillas are prepared to order for a light, crisp shell with that signature puffy bite.
Flame grilled to perfection
We marinate our steak and chicken, then flame grill them to perfection for bold flavor in every bite.
Built for events
From school functions to private celebrations, we bring freshly prepared food and friendly service to your gathering.

Who you'll be dealing with
Shawn runs the kitchen. If you have eaten a puffy taco from this truck, he or someone he trained pressed the shell for it.
Alicia handles bookings and events — dates, headcounts, timing, and the thousand small questions that come with putting a food truck in a parking lot at a specific hour.
